Avocado and Prawn Cocktails

Ingredients

4 Avocados, halved, pip removed
Crab –surimi
16 prawns, tails removed
Coriander to serve
Juice of one Lemon

 

Dressing Ingredients

1 garlic clove, minced
3 Tablespoons low-fat mayonnaise
2 Tablespoons chilli sauce
2 Tablespoons tomato sauce
Juice of 1 lemon
Black pepper

 

Method  

Mix together dressing ingredients in a bowl, set aside

Place avocado halves on a serving platter or tray and sprinkle with lemon juice

Mix together crab, prawns and dressing in the bowl with the dressing. Place mixture on top of each avocado and sprinkle with chopped coriander
