Avocado Devilled Eggs

Avocado Devilled Eggs

Serves: Makes 20 halves

Preparation: 15 minutes

Cooking: 7 to 9 minutes

 

Ingredients

2 avocados, diced
10 large eggs, hard boiled, cooled and peeled
2 ½ tablespoons mayonnaise
1 teaspoon mustard powder
1 teaspoon curry powder
Pinch of cayenne pepper
Pepper to taste

 

Method

Halve eggs lengthways and carefully remove yolks and place in a bowl

Add avocado, mayonnaise, mustard, curry powder and peppers to the yolk. Blend well (we used a stick blender)

Place avocado mixture into a piping bag (or Ziploc bag with the corner snipped) and pipe mixture into each egg’s centre

Refrigerate until ready to serve
