Avocado Hummus

Serves: a crowd

Preparation: 10 minutes

Ingredients

2 ripe avocados
1 tin chickpeas, drained
Fresh coriander, finely chopped
1 clove garlic, minced
Juice of 1 lemon
Juice of 1 lime
1 red chilli, deseeded and finely chopped
1/2 teaspoon cumin
3 Tablespoons olive oil
Pepper to taste

 

Method

Place all ingredients in a food processor

Whizz until smooth, refrigerate until ready to serve

Serve with carrot, cucumber, celery sticks or rice crackers

 

NB: Use the dip the same day as may brown overnight (avocados)
