Banana Bread

Serves: 10 slices

Preparation: 15 minutes

Cooking: 50-60 minutes

 

Ingredients

4 bananas, mashed (approximately 1 ½ cups)
1/3 cup oil (we used canola oil)
½ cup honey or maple syrup (we used ¼ cup each)
2 eggs
¼ cup low fat milk
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
1 ¾ cup whole wheat flour
½ cup nuts or raisins (we used walnuts)

 

Method

Heat oven to 180°C. Grease a loaf tin 

In a large bowl, beat the oil and honey/maple syrup 

Whisk in the eggs then mix in the banana and milk

Add the baking soda, vanilla, salt and cinnamon. Mix until combined

Gently fold in the flour and the nuts or raisins 

Pour into the prepared loaf tin and bake 50-60 minutes, until an inserted

skewer comes out clean

Cool on a wire rack

 

NB: Banana bread makes a great addition to the school lunch boxes
