Broccoli and Cauliflower Mac and Cheese

Broccoli and Cauliflower Mac and Cheese

Serves: 6

Cooking: 30 minutes



2 heads cauliflower, cut into florets
1 head broccoli, cut into florets
2 cups baby spinach
1 onion, diced
2 cups dry macaroni
120g tasty cheese, grated
1 cup milk, room temperature
1 heaped tablespoon flour
1 tablespoon olivio or similar
250g sliced natural almonds
Olive oil
Salt and pepper to taste



Turn oven to bake at 180°C 

Place water in a large pot and bring to the boil, add macaroni and cook until al dente (firm to the bite), drain and run cold water through (to rinse off starch)

Steam half the cauliflower (or boil if you do not have a steamer) until the cauliflower has softened, drain, puree with a dash of milk (you can do this in a food processor or with a stick blender)

Sautee broccoli, cauliflower and onion in a small amount of olive oil until softened slightly, about 5 minutes

In a pot on medium heat, melt butter and add flour, mixing until a paste forms. Heat for approximately one minute, then slowly add your milk, heating until thickened to a white sauce, remove from heat 

Stir white sauce through pureed cauliflower until combined

In a casserole dish, place macaroni, white sauce and vegetables, stir to spread sauce evenly throughout

Sprinkle sliced almonds and cheese on top and bake in the oven for 30 minutes, until heated through. Grill for a further 5 minutes until the cheese is brown and crisp
