Chow Chow Chutney

Serves: 4 litres

Preparation: 20 minutes

Cooking: 1 ½ - 2 hours

 

Ingredients

2kg mixed vegetables – cauliflower cut into small pieces, green beans sliced and peeled, cucumber seeded and chopped, broccoli cut into small pieces, celery or green tomatoes sliced
250g onions, diced
1⁄4 cup salt
2 litres water
1 cup sugar
1⁄2 cup flour
2 teaspoon tumeric
2 tablespoons mustard
1 teaspoon celery seeds
4 1⁄2 cups white vinegar

 

Method

Put the mixed vegetables in a large saucepan and pour over the salt and water, cover and leave overnight

Heat slowly to boiling and simmer for 5 minutes

Drain well

In a separate saucepan mix flour, sugar, tumeric, mustard and celery seeds

Mix to a paste with some vinegar then add the remainder of the vinegar

Slowly bring to the boil, stir constantly, then simmer for a few minutes

Add to the vegetables

Pour into hot, clean jars and seal
