French Onion Soup

French Onion Soup

Serves: 6

Preparation: 25 minutes

Cooking: 2 hours 30 minutes



8 large brown onions, thinly sliced
25 grams of reduced fat spread
3 tablespoons dry sherry
2 bay leaves
2 tablespoons of fresh thyme
2 gloves garlic
1 litre chicken or beef stock
Chives, finely chopped



Bread of our choice, toasted
1 cup grated Gruyere cheese



Heat the reduced fat spread in large pan, add onions, thyme and a sprinkle of salt. Cover and cook gently until onions are soft (about 20 minutes)

Once onions are ready remove lid and continue to cook until they are golden and caramelized

Add sherry and cook for a few minutes before adding bay leaves, thyme, garlic and stock

Bring to a boil then reduce temperature and simmer for at least 1 hour

Season with salt and pepper to taste

Grill the baguette slices

Pour soup into individual ovenproof bowls, top with 2 or three slices of baguette and top with grated Gruyere

Grill until cheese is melted and bubbly

Top with chopped chives and serve
