Grilled Mango Pineapple Salad with Lime and Coconut

Serves: a crowd

Preparation: 20 minutes

Cooking: 6 minutes

 

Ingredients
2 mangos, skin removed and chopped into chunks
1 pineapple, skin removed and chopped into chunks
Juice of 1 lime
4 or 5 handfuls of mixed lettuce leaves
1 bunch spring onion, sliced
½ red capsicum, diced
¼ cup coconut flakes
5-6 mint leaves, chopped finely
Coconut oil, for cooking fruit
Olive oil for dressing the salad

 

Method

Heat a grill to medium heat. Brush mango and pineapple pieces with coconut oil.  Place fruit onto the grill and cook for 2-3 minutes on each side.  Transfer grilled fruit to a plate and drizzle with lime juice

Add the rest of the ingredients into a salad bowl and toss

Once fruit has cooled add in bowl with the salad and toss again

Dress with olive oil and extra lime juice to suit taste
