Grilled Pineapple with fresh Basil, Mint and Lime Sugar from Nadia

Serves: 4 to 6

Preparation: 10 minutes

Cooking: 5 minutes

 

Ingredients

One fresh pineapple, peeled and sliced (as per image)
1 tablespoon coconut oil
Coconut threads
Plain yoghurt

Basil and Lime Sugar Ingredients

Fresh basil (handful of leaves)
Fresh mint (handful of leaves)
Zest of one lime (keep lime for serving as wedges)
¼ cup white sugar

 

Method

Heat oil in a grill pan on medium to high, grill each pineapple for 2 minutes each side or until caramelised

Use a mortar and pestle to grind basil leaves and lime zest with 2-3 teaspoons of sugar until a green paste forms. Add remaining sugar and mix through to form green sugar

Place pineapple on a serving platter and sprinkle over basil and lime sugar and coconut threads. Serve with a dollop of yoghurt and a lime wedge or two

 

NB: You could also cook pineapple on the BBQ grill
