Julia and Libby's Crispy Smashed Potatoes with Pesto

Serves: 4

Preparation: 20 minutes

Cooking: 15 minutes

 

Ingredients

500g baby potatoes, washed
3 cloves garlic, pressed, finely diced
Fresh chives, stalks cut in half
Handful fresh parsley, chopped
100g pesto
3 tablespoons olive oil
Salt and pepper to taste

 

Method

Heat oven to 180˚C and line an oven tray with baking paper

In a large pot, boil the potatoes for 15 minutes or until soft. Drain water and place potatoes onto the baking tray. Using a fork, carefully flatten each potato but keep in one piece

Drizzle potatoes with olive oil and sprinkle with garlic, salt and pepper

Place into the oven and bake for 15 minutes or until golden and crispy

Remove potatoes from oven and top with a dollop of pesto and a sprinkling of chives and parsley

Serve warm. Enjoy!
