Kale and Leek Stir-Fry

Serves: 2-4

Preparation: 5 minutes

Cooking: 12-14 minutes

 

Ingredients

1 bunch kale (5 or 6 stems), chopped into strips

6 Baby leeks or 2 large leeks, chopped

2 cloves garlic, finely sliced

3 tablespoons olive oil

1/2 cup water

Salt and pepper to taste

 

Method

Heat oil in a large frying pan over medium heat

Sauté the garlic and leeks until soft

Add the kale and toss to combine

Add water and cover with a lid for 5 minutes

Remove lid and cook until water is absorbed  

Season with salt and pepper
