Mandarin and Passionfruit Mascarpone Tarts

Ingredients

8 Mandarins, peeled and segmented
4 Passionfruit (2 for filling and 2 for decorating)
1 Mandarin, juice and zest
1 Lemon, juice and zest
1 Vanilla pod, seeds only
250g Mascarpone
1 cup low fat yoghurt (of your choice, we used plain Greek yoghurt)
Pack of 12 individual sweet tart cases (available in supermarkets)

  

Method

Mix mascarpone, yoghurt, vanilla seeds, the pulp from two passionfruit with the lemon and mandarin juice and zest together in a bowl

Spoon into tart cases and decorate with mandarin segments and passionfruit

Refrigerate for up to six hours (cases tend to go soft if refrigerated overnight)

 Use mandarin segments to decorate your plate too
