Nashi and Persimmon Deconstructed Salad

Serves: A crowd

Ingredients

3 Nashi pears, sliced (sprinkle with lemon juice to stop browning)
4 Persimmon, sliced
3 handfuls baby rocket
½ cucumber, sliced
½ red onion, sliced
1 red capsicum, sliced
1 handful alfalfa sprouts
2 handfuls cherry tomatoes
1 red chilli, sliced
2 Tablespoons of blue cheese, crumbled (optional)
1 small handful raw walnuts

 

Dressing Ingredients

Juice of half an orange
1 Tablespoon Balsamic vinegar
1 Tablespoons extra virgin olive oil
1 teaspoon grainy mustard
1 teaspoon honey

 

Method

Mix dressing ingredients until combined and add a few slices of chilli

Arrange salad ingredients in their own piles – as per image. Top with crumbled blue cheese, chillies and walnuts

 

NB: You can swap any of the salad ingredients for seasonal fruit and vegetables
