Nashi Pear Parfaits

Nashi Pear Parfaits

Ingredients

4 Nashi pears, sliced and seeds removed
3 Granny Smith or cooking apples
1/2 packet ginger nuts, roughly crushed
100g hazelnuts
100g pistachio nuts (no shell)
100g almonds
250g mascarpone
5 Tablespoons unsweetened Greek yoghurt
Cooking spray (olive oil or similar)
3 Tablespoons liquid honey

6 medium sized jars

  

Method

Preheat oven to 180°C 

On a baking tray lined with baking paper spread the nuts and crushed gingernuts and spray with olive oil and an even drizzle of honey

Roast for 5 to 10 minutes; keep a close eye throughout as they can burn quickly. Remove from the oven and allow to cool completely

Place the sliced pear and apple on a baking tray lined with baking paper, bake the fruit for 20 minutes or until tender. The apple will cook more than the Nashi pear which is what you are after

When the fruit has cooled completely, cut the Nashi pear into chunks 

Combine apple, mascarpone and yoghurt with a fork 

In the bottom of each jar place a layer of the nut mixture, followed by the mascarpone apple mix (be careful to not touch the sides). The middle layer is the Nashi pieces, followed by more mascarpone and a final sprinkle of the nut mixture 

Screw the lids on the jars and refrigerate until ready to serve

NB: These are a great dessert to take with you to an event as they travel well, just pop in a cooler bag
