Orange Salad with Chilli Salmon

Serves: 4

Preparation: 15 Minutes

Cooking: 4 Minutes

 

Ingredients

2 Oranges, peeled and sliced
4 Handfuls spinach
4 Handfuls salad greens
1 Handful bean sprouts
2 Grated carrots
1 Avocado peeled and sliced
2 Salmon fillets
2 teaspoons chilli flakes

 

Dressing 

Juice of 1 orange
Juice of 1 lemon
2 Tablespoons olive oil
1 Tablespoon sweet chilli sauce

 

Method

Mix dressing ingredients in a jug

Place spinach on a serving platter and sprinkle over bean sprouts and grated carrot. Top with orange and avocado slices

In a non-stick frying pan cook the salmon with chilli flakes. Cook for two minutes each side or until cooked through. Allow to cool

Break up salmon and place on prepared salad, drizzle dressing over just prior to serving
