Pan-fried asparagus with balsamic strawberries and feta

Serves: a crowd

Preparation: 5 minutes

Cooking: About 10 minutes

 

Ingredients

3 bunches of fresh asparagus
2 handfuls of fresh strawberries, sliced
2 splashes of avocado oil (you could use olive oil)
Splash of balsamic vinegar
100 grams reduced salt feta
Freshly ground black pepper

 

Method

Heat oil on a medium heat and place asparagus spears gently into the pan, cook in two batches for about three to five minutes continually moving the pan so the asparagus cooks evenly

Place on a plate to cool and using the same pan splash some more oil in and then the sliced strawberries. Splash over the balsamic and cook for about two minutes (until slightly caramelised)

Arrange asparagus on a white platter top with strawberries and crumbled feta cheese, finish with freshly ground black pepper
