Parsnip and Carrot Mash

Serves: 4 - 6 (as side dish)

Preparation: 5 minutes

Cooking: 20 minutes

 

Ingredients

6 parsnips, peeled and sliced
6 carrots, peeled and sliced
Juice of one orange
Rind of 1/2 an orange
1 teaspoon grated ginger
2 cloves garlic, minced
Salt and pepper to taste

 

Method

Place slices of parsnips and carrots into boiling water leave for 15 minutes or until soft

Remove from heat and strain water

While still hot, add orange juice, garlic and ginger and mash to desired texture

 

NB: You can place on a serving platter with a light sprinkle of cheese and grill in the oven for 5 minutes before serving for those cold winter nights
