Passionfruit Chicken with Mango and Avocado Salad

Serves: 4

Preparation: 20 minutes (marinade overnight)

Cooking: 30 to 40 minutes

 

Ingredients

4 skinless chicken breasts, cut in half lengthways
3 avocado, sliced lengthways
3 mangos, peeled and sliced
10 cherry tomatoes, halved
2 handfuls baby spinach
1 tablespoon olive oil

 

Marinade

6 passionfruit, pulp
1 tablespoon Dijon mustard
1 tablespoon ginger, minced
1 tablespoon apple cider vinegar
Salt and pepper to taste

 

Method

In a large bowl whisk the marinade ingredients to combine

Add chicken to marinade and coat thoroughly, cover securely and refrigerate overnight

Preheat oven to 180°C and cook chicken with marinade for 30 minutes or until chicken is cooked through. Slice chicken lengthways

In a large serving dish layer spinach, avocado, mango and tomatoes and place chicken on top. Spoon remaining passionfruit marinade over the top

 

NB:

  • Ensure you wash your hands after handling chicken and use different dishes for raw and cooked chicken
