Passionfruit Salsa with Mango and Peach

Serves: 6 to 8

Ingredients

6 passionfruit, pulped
2 mango, peeled and diced
2 peaches (peacherine or golden queen), diced
1 red onion, diced
Juice of 1 lime or lemons
10 coriander leaves, sliced finely
10 mint leaves, sliced finely
1 red chilli, diced finely and deseeded
1 Tablespoon white balsamic vinegar

 

Method 

Place all prepared ingredients in a large bowl, pour over lime/lemon juice, passionfruit pulp and vinegar. Mix everything to ensure fruit is well coated

Refrigerate until ready to serve

When serving mix in fresh herbs

 

NB: This salsa is fantastic with chicken and fish
