Pineapple Salsa with Lemon Fish Tacos

Serves: 6-8

Cooking: 45 minutes

 

Ingredients

 

Tacos

1 Kg lemon fish (or similar), cut in strips
Olive oil
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon cajin spice
2 Tablespoons self-raising flour
1 chilli finely chopped
Coriander leaves to serve
8 flour tortillas

 

Toppings

Two handfuls baby spinach or salad greens
Greek yoghurt to serve
Pineapple Salsa 

 

Method

Preheat frying pan to medium-high heat. Mix together all dry ingredients in bowl and coat fish strips.

Cook fish for about 4 minutes

Cook tortillas according to packet instructions. To serve divide the fish among the tortillas and top with pineapple salsa, salad greens and Greek yoghurt
