Poached Peaches with Passionfruit & Mint

Serves: 4

Preparation: 10 minutes

Cooking: 15-20 minutes

 

Ingredients

4 peaches, halved, stones removed
8 passionfruit, pulp
Fresh mint leaves
1 cup sweet wine (we used dessert wine)
1 cup water
2 tablespoons caster sugar
1 tablespoon honey

 

Method

In a saucepan, over a medium, heat stir together the passionfruit, wine, water and sugar until the sugar is dissolved

Bring to the boil then reduce to a simmer and add the peaches

Cover and poach gently for 5 minutes or until just tender

Remove the peaches with a slotted spoon and place in a serving bowl

Add the honey to the liquid and boil rapidly for 5-10 minutes until reduced by two thirds

Pour the passionfruit syrup over the peaches

Garnish with mint and serve with yoghurt
