Potato Mash Three Ways

Serves: 10 minutes

Preparation: 20 minutes

Potato, Swede & Horseradish Mash

 Ingredients  

4-6 potatoes, washed & roughly chopped (Agria,  Draga or Ilam Hardy work well)
1 Swede, peeled & diced into 2cm cubes
1 tablespoon horseradish (we used store-bought, grated in a jar)
¼ cup milk (more or less for your favourite consistency)
2 tablespoon fresh parsley, chopped
Freshly ground black pepper 

Method

Boil the potatoes and swede until soft

Drain and mash with the horseradish and milk until smooth

Stir through the parsley and season with black pepper

  

Potato & Kūmara Mash 

Ingredients 

4-6 potatoes, washed & roughly chopped (Agria, Draga or Ilam Hardy work well)
2 medium kūmara, peeled & roughly chopped
1 tablespoon lite sour cream
¼ cup vegetable stock (more or less for your favourite consistency)
2 tablespoons fresh mint, chopped
Freshly ground black pepper 

Method

Boil the potatoes and kūmara until soft

Drain and mash with the sour cream and stock until smooth

Sprinkle over the mint and season with black pepper

Potato & Carrot Mash 

Ingredients

4-6 potatoes, washed & roughly chopped (Agria, Draga or Ilam Hardy work well)
3 carrots, washed and chopped
1 tablespoon butter
¼ cup milk (more or less for your favourite consistency)
Freshly ground black pepper 

Method 

Boil the potatoes and carrots until soft

Drain and mash with the butter and milk until smooth

Season with black pepper
