Potato Salad with Lemon and Mint Dressing

Potato Salad with Lemon and Mint Dressing

Serves: 8 as a side

Preparation: 10 minutes

Cooking: 20 to 30 minutes

 

Ingredients

20 new potatoes, washed
2 shallots, finely diced
1 garlic clove, finely chopped
Juice and zest of 1 lemon
Splash of extra virgin olive oil
1 cup natural yoghurt
1 cup fresh or frozen peas
1 handful sugarsnap peas, trimmed
1/2 cup torn mint leaves

 

Method

Boil potatoes with a pinch of salt for 20 to 30 minutes or until tender, drain and set aside to cool. Peel when cool enough to handle ( or you can leave the skin on) 

Mix shallots, garlic, lemon juice, rind, oil and yoghurt then pour over cooled potatoes to coat and refrigerate until ready to serve

Blanch peas (if using frozen) and sugarsnaps for one minute in boiling water, drain, pour over ice-cold water to bring the colour up and drain

Place the potato mixture in a serving dish and cover with the peas and sugarsnaps. Then sprinkle with mint leaves and pepper
