2-3 tablespoons  oil
2-3 tablespoons  tomato paste
1 large onion, diced
2 cloves garlic, crushed
1 small eggplant, diced
300-400g tomatoes chopped
2-3 courgettes, sliced
1 red and yellow capsicum, cut in chunks
1 cup button mushrooms, halved
1/2 cup water
1 teaspoon each dried basil and oregano
1 teaspoon each sugar and salt
freshly ground black pepper
1 teaspoon vinegar


Put oil and tomato paste in a large pot

Then layer all vegetables starting with onion and garlic then eggplant, tomatoes, courgettes, peppers and mushrooms

Pour over water and add herbs, seasonings and vinegar

Cover and cook over medium high heat for 5 minutes then turn to very low and cook another 20 to 30 minutes until vegetables are tender (take care not to burn)
