Raw Vegetable Spiral Salad with Navel Oranges

Ingredients

2 Navel oranges, peeled and sliced thinly
1 medium beetroot
2 carrots
½ telegraph cucumber
1 punnet cherry tomatoes
2 handfuls baby kale
2 handfuls baby spinach
1  teaspoon chia seeds
1 teaspoon flax
100g bocconcini (or cheese of your choice)

 

Dressing Ingredients

1 tablespoon freshly squeezed Navel orange juice
1 teaspoon pomegranate molasses
2 tablespoons extra virgin olive oil
Seasoning to taste

 

Method

If you have a fruit and vegetable slicer, cut the beetroot and carrots into spirals, and the cucumber into ribbons (otherwise grate or finely slice vegetables), and place in a large bowl with the salad greens

Whisk the dressing ingredients and pour over the vegetables. Gently toss

Place the salad on a serving platter and add the orange slices and tomatoes

Sprinkle with the seeds and drop on pieces of bocconcini
