Red Slaw

Ingredients 

¼ red cabbage, finely sliced
1 medium carrot, grated
½ red onion, diced
1 red capsicum, finely sliced
1 medium beetroot, grated
2 tablespoons mint, sliced

 

Dressing

2 tablespoons lemon juice
6 tablespoons olive oil
1 teaspoon Dijon mustard
Salt and pepper to taste

 

Method

Mix all ingredients in a large serving bowl.

Whisk the dressing ingredients and toss through the Red Slaw.

 

Tip: Use gloves when grating the beetroot to avoid staining your fingers
