Salad with Lime and Macadamia

Ingredients

1 teaspoon finely grated lemon rind
2 tablespoons lemon juice
¼ cup macadamia oil
½ teaspoon caster sugar
4 cups of salad leaves (try cos, rocket, baby spinach)
½ telegraph cucumber, sliced into ribbons using a vegetable peeler
1/3 cup (45g) toasted macadamias, crushed

 

Method

Combine the lemon rind and juice, oil and sugar in a small jug. Season to taste

Toast the macadamia nuts in a non-stick pan over a medium heat with a drop of the oil for about 4 minutes or until lightly coloured. Once cooled chop roughly and crush with the flat side of a large kitchen knife

Place the salad leaves, cucumber and half the macadamias in a large bowl and toss

Just before serving add dressing and re-toss. Top with remaining macadamias
