Scrambled Eggs with Spinach and Tomatoes

Ingredients

2 eggs

2 handfuls baby spinach leaves

5-6 cherry tomatoes

2 pieces wholemeal bread, toasted

1 tablespoon milk (optional)

1/2 teaspoon olive oil/coconut oil

Pepper to taste

 

Method

Heat oil in saucepan over a medium heat

Break eggs into a small bowl. Add milk or water and thoroughly whisk. Add spinach

Reduce heat to low and pour the beaten eggs into the saucepan

With a spatula or wooden spoon, stir the eggs gently until it forms into soft curds and there is no runny egg left. Once cooked, add cherry tomatoes to gently warm

Poor cooked eggs onto toast. Sprinkle with pepper and serve immediately
