Shredded Brussels Sprouts with Bacon

Serves: 6

Preparation: 10 minutes

Cooking: 20 minutes

 

Ingredients

500g Brussels sprouts, cored and shredded
3 spring onions, finely sliced
3 rashers bacon, roughly chopped
1/4 cup pine nuts, toasted
25g butter
Freshly ground black pepper and salt to taste

 

Method

In a large fry pan cook the bacon until crisp and chop into smaller pieces

In the same pan (without washing) melt the butter then add the Brussels sprouts and spring onions

Cook over a medium heat until the sprouts are tender, about 10-15 minutes

Season with salt and pepper, mix through the bacon and pine nuts just prior to serving
