Avocado and Prawn Cocktails

Ingredients

4 Avocados, halved, pip removed
Crab –surimi
16 prawns, tails removed
Coriander to serve
Juice of one Lemon

 

Dressing Ingredients

1 garlic clove, minced
3 Tablespoons low-fat mayonnaise
2 Tablespoons chilli sauce
2 Tablespoons tomato sauce
Juice of 1 lemon
Black pepper

 

Method  

Mix together dressing ingredients in a bowl, set aside

Place avocado halves on a serving platter or tray and sprinkle with lemon juice

Mix together crab, prawns and dressing. Place mixture on top of each avocado and sprinkle with chopped coriander
