Avocado Salad

6 avocados, pitted, sliced
½ red onion, thinly sliced
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ cup fresh parsley, roughly chopped


Juice of 1 lemon
3 tablespoons olive oil
Pinch of salt & freshly ground pepper


Place avocado, red onion, cherry tomatoes, cucumber and parsley into a medium bowl, mix well

Drizzle with olive oil, lemon juice, salt and pepper. Toss gently to combine.

Store in fridge if not serving immediately
