Baked Asparagus & Cheese Rolls

Baked Asparagus & Cheese Rolls

Serves: 4

Preparation: 10 minutes

Cooking: 5 minutes



8 spears fresh asparagus, ends snapped off (you could use two or three spears for each roll if you have extra asparagus)
8 slices whole grain bread
1 cup grated tasty cheese
2 tablespoons of mustard (we used grainy)
4 tablespoons of light mayonnaise
Olive oil spread or similar
Pepper to taste



Preheat oven to 180˚C

Spread one side of bread with the olive oil spread. Mix mustard and mayonnaise together and spread on the other side of the bread. Sprinkle even amount of cheese on the mayo side and place one or two asparagus spears diagonally on each slice

Roll the corners to the top and use a skewer to secure

Place on a rack on a baking tray and bake for 15 to 20 minutes or until golden and spears have softened

Serve while warm
