Oil or cooking spray to coat BBQ grill
2 firm plums
2 firm peaches
2 firm nectarines
2 firm apricots
1/2 cup balsamic vinegar
1 small, peeled chunk ginger root, 1/2-inch
2 tablespoons brown sugar
Ground black pepper (optional)
Heat BBQ to a medium heat
Coat the surface of the BBQ with oil or spray to prevent the fruit sticking
Wash and halve all fruit and take out the stone
Place fruit cut side down on grill and cook 3 to 4 minutes until warmed through and evenly marked
To make glaze reduce remaining ingredients by half in a pot over medium-high heat.
When it is like syrup discard the ginger
Arrange the fruit on a platter and drizzle glaze over the fruit
Serve with mascapone or yoghurt
