2 avocados, chopped
1/2 cup chopped fresh coriander plus more for garnish
1x 400g can black beans, rinsed and drained
2 red capsicum, diced
1 shallot or red onion, diced
2 cloves garlic, minced
1/4 teaspoon cayenne pepper (or to taste)
6 tablespoons extra virgin olive oil
1 teaspoon lime zest (zest limes before juicing them)
6 tablespoons fresh lime juice
Pinch of salt
Combine all salad ingredients except for avocados in a large bowl and mix well. Add avocados and mix gently, being careful not to mash avocados.
Whisk together vinaigrette ingredients in a small bowl and pour over salad. Gently toss to combine.
Garnish with more chopped coriander before serving.
