Cherry Pie Crumb Bars

Serves: 8

Cooking: 25 minutes



2 cups fresh cherries, pitted and sliced
100g butter, melted
1 ½ cups flour
1/3 cup brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
Pinch salt
Juice of 1 lemon


Preheat oven to 180°C and line a 20cm square baking tin with baking paper 

In a medium bowl, combine cherries and lemon juice. Set aside

In a large mixing bowl, stir together butter, sugar, flour, baking soda, baking powder and salt until the mixture is crumbly

Put aside ¼ cup of flour mixture. Press remaining crumb mixture into the bottom of baking tin. Spread cherry filling over the crust and sprinkle remaining crumb mixture over cherries

Bake for 25 minutes or until the top is golden. Allow to cool before cutting into bars
