Creamy Oats with Mandarin & Macadamia Nuts

Creamy Oats with Mandarin & Macadamia Nuts

Serves: 2

Cooking: 5-10 minutes

 

Ingredients 

Zest of 1 mandarin
1 cup porridge oats
1½ cups water
½ cup milk (of your choice)
½ teaspoon vanilla extract
Pinch of salt
 

Toppings 

2 mandarins, peeled, split into segments
¼ cup macadamia nuts and/or pecans (use nuts or seeds of choice)

 

Method  

In a small saucepan, stir together mandarin zest, oats, water, milk, vanilla extract and salt 

Bring to a simmer and cook over a medium heat for a few minutes until the oats are thick and creamy, stirring occasionally

While the oats are cooking, gently toast the macadamia nuts by rolling them around a heated fry pan until lightly golden

Spoon the oats into bowls, top with mandarin segments and nuts
