Crispy Colourful Slaw

Crispy Colourful Slaw

Serves: 8 people as a side

1/4 Red cabbage, finely sliced
1/4 White cabbage, finely sliced
2 Granny Smith apples, cut into matchsticks
Juice of one lemon
1 small fennel bulb, finely sliced



1 Tablespoon red wine vinegar
1 Tablespoon smooth Dijon mustard
2 Tablespoons extra virgin olive oil
Sea salt and cracked black pepper to taste



In a small jug incorporate the dressing ingredients and set aside

Cut the apples into matchsticks and pour over lemon juice immediately to stop from browning

In a large bowl add red and white cabbages, apple, fennel and the dressing and mix well with hands until dressing mixed through

Place the slaw on a serving platter one handful at a time (this will help avoid the plate getting messy)


NB: This slaw is a great accompaniment to BBQs, sandwiches and pork dishes
