Feijoa Muffins with Ginger & Walnuts

Ingredients 

5 feijoas, peeled & chopped (2 cups)
2 bananas, mashed
1 ½ cups plain flour
½ cup bran
2 teaspoons baking powder
1 teaspoon ground ginger
Pinch of salt
125g butter (room temperature)
¾ cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 teaspoon fresh ginger, finely grated
1 cup walnuts, chopped

 

Topping Ingredients

1 feijoa finely sliced, skin on
Few walnuts, chopped
1 tablespoon crystallised ginger, sliced

 

Method 

Preheat oven to 180°C and line a muffin tin with muffin papers

Sift flour, baking powder and ground ginger into a large bowl. Add salt, bran and mix to combine

In a separate bowl cream butter and brown sugar until pale in colour and fluffy.  Whisk in eggs, banana, vanilla, lemon zest and fresh ginger

Add the wet ingredients to the dry and fold until just combined. Add the walnuts and feijoas and gently fold

Spoon the batter into each muffin paper. Place a feijoa slice or a sprinkle of walnuts and crystallised ginger to the top of each muffin

Bake for 20 minutes or until an inserted skewer comes out clean
