Italian Stir-Fry

Serves: 3-4

Preparation: 8 minutes

Cooking: 6 minutes



2 courgette, cubed

1 eggplant, cubed

1-2 capsicum, cubed

1 red onion, chopped

2 handfuls green beans

2 handfuls baby spinach

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 teaspoon basil or oregano

2 tablespoon olive oil

Pepper to taste



Rinse vegetables under running water and chop into cubes

Heat olive oil in a large frying pan or wok over medium heat

Add garlic, ginger and herbs

Add chopped vegetables and sauté for 5 minutes, until vegetables are tender

Place vegetables into a large bowl and toss through spinach leaves

Season with pepper and serve
