Kūmara and Banana Salad

Kūmara and Banana Salad

Serves: 6 to 8 as a side

Preparation: 10 minutes

Cooking: 15 to 20 minutes



4 kūmara, sliced into even bite-size pieces
2 bananas, sliced (just prior to serving)
4 spring onion, finely sliced
3 teaspoons curry powder
½ cup low-fat mayonnaise
½ cup natural low-fat Greek yoghurt
Juice of ½ a lemon
2 teaspoons lemon zest
Fresh Cracked pepper to taste
Pinch of salt



Boil the kūmara pieces in water with a pinch of salt for 15 minutes or until softened but still holding their shape. Drain the kūmara and leave to cool to room temperature

In a bowl mix the mayonnaise, Greek yoghurt, lemon juice, zest and pepper, stir until combined 

Then add the dressing to the cooled kūmara and gently mix to combine (careful to not break up the kūmara pieces)

Sprinkle spring onion on top and refrigerate until ready to serve

When ready to serve add sliced bananas and mix gently to combine
