Kūmara Nibbles

Serves: a crowd

Preparation: 20 minutes

Cooking: 15-20 minutes



2 medium red kūmara, thinly sliced
2 medium gold kūmara, thinly sliced
5 small Portobello mushrooms, sliced
½ red capsicum, sliced into batons
½ yellow capsicum, sliced into batons
Basil pesto
Plain yoghurt
Parmesan cheese, finely grated
Mint or other herbs to garnish
Oil spray



Heat oven to 180°C

Spray two baking trays with oil. Place the kūmara on one tray and the mushrooms and capsicum on the other in a single layer

Bake the vegetables for 15-20 minutes, turning the kumara after 10 minutes. The capsicum and mushrooms may cook more quickly than the kūmara

Once cooked, allow the vegetables to cool slightly then place on a serving board

To assemble the kūmara nibbles, top each kūmara slice with ¼ teaspoon of pesto or yoghurt, add a mushroom and capsicum slice to each one and top with a pinch of parmesan cheese

Garnish with a sprinkling of fresh herbs before serving
