Kale and Broccoli Soup

Kale and Broccoli Soup

Serves: 4

Preparation: 15 minutes

Cooking: 30 - 40 minutes



3 handfuls of kale (we used baby kale)
1 head of broccoli, cut into florets
1 large onion, roughly chopped
1 large leek, sliced finely
2 cloves garlic, chopped finely
3 Agria potatoes, peeled and chopped finely
4 cups of vegetable or chicken stock (we used salt reduced)
Olive Oil
Black pepper



Heat the olive oil a large pot then add onion, leek and garlic and sauté until soft (be sure to use low to medium heat so they don't burn)

Add half the stock and the potatoes and cook until potatoes are cooked through, about 15 minutes. Add the rest of the stock followed by the kale and broccoli and cook until broccoli is cooked through, about 5 minutes

Take off the heat and use a hand blender to blend the soup to the desired consistency

Return to element to reheat and serve

This soup goes well with a sprinkling of cheese and a tablespoon of natural yoghurt


NB: If using large kale, remove the stems, as these can be tough
