Nashi Pear & Cranberry Salad

Ingredients

2 Nashi pears, cored, thinly sliced
4 cups mixed salad greens
¼ cup shaved parmesan
¼ cup dried cranberries
1/3 cup walnuts, roughly chopped
 

Dressing 

2 tablespoons olive oil
1 tablespoon wholegrain mustard
1 tablespoon balsamic vinegar
Pinch salt & freshly ground pepper
 

Method   

In a large bowl, combine the Nashi pear, mixed greens, parmesan, cranberries and walnuts

In a small bowl, whisk together the dressing ingredients. Gentlly mix the dressing through the salad before serving
