Orange Loaf

3 oranges, juice only
1 orange, juiced & kept separate
2 eggs
1 cup sugar
Orange zest from 1 orange
100g butter, softened 
2 cups flour
3 teaspoons baking powder



Preheat the oven to 180°C on fan bake and line a loaf tin with baking paper

Using a fork or electric mixer, cream butter and sugar until creamy.  Add the eggs, orange juice from 3 oranges and orange zest. Sift in flour and baking powder and mix well

Pour the batter into a loaf pan. Bake for 50 minutes or until an inserted skewer comes out clean

When ready, take out from the oven pour the remaining orange juice over the loaf. Let it sit for about 10 minutes before transferring onto a wire rack. Let cool completely

Serve with a little butter, yoghurt or ice cream
