Pear and Parmesan Salad

Pear and Parmesan Salad

Serves: 4 to 6 as a side

Preparation: 10 minutes

4 handfuls of rocket
4 pears, peeled, cored and thinly sliced

Juice of 1 lemon
100g of Parmesan shavings
50g of pine nuts, toasted



3 Tablespoons of extra virgin olive oil

1 Tablespoon of balsamic vinegar

1 clove of garlic, minced

Sea salt and pepper to taste



Combine dressing ingredients in a jug 

On a platter layer rocket and pear, then squeeze lemon juice over the pear slices so they don't go brown

Pour over dressing and top with Parmesan and nuts just before serving 


NB: Refrigerate salad and dressing separately if not serving immediately
