Pear Balsamic Salad with Roasted Walnuts

Ingredients

1 pear, stem and seeds removed, thinly sliced
100g mixed greens
1 cup raw walnuts
¼ cup dried cranberries
2 tablespoons olive oil
1 tablespoon brown sugar or coconut sugar
1 medium shallot, thinly sliced
Pinch of salt

 

Dressing

¼ cup balsamic vinegar
3 tablespoons olive oil
Pinch of salt

 

Method

Preheat the oven to 180°C on fan bake

Line an oven tray with baking paper and add walnuts, drizzle with olive oil, sugar and a pinch of salt. Bake for 7-10 minutes or until the walnuts turn golden. Set aside to cool 

Prepare the dressing and set aside

To serve, add the greens, pear, cranberries, roasted walnuts and shallot to a large bowl. Evenly toss through the dressing
