Pineapple Salsa

Pineapple Salsa

Serves: 6-8

Preparation: 30 minutes

1 pineapple, finely diced, discard the hard core
1 cucumber, diced and seeds removed
2 Chilies finely chopped
1 teaspoon freshly squeezed lime or lemon juice
2 Tablespoons freshly chopped coriander


Pineapple Bowl

Cut the pineapple in half (you can use both halves to serve the salsa) 

Cut around the edge of the skin and around the core. Then cut out the flesh and chop up finely. Remember to keep the pineapple for your salsa (see photo above)



Place all finely chopped ingredients together into a bowl and mix

Serve salsa in the pineapple bowls topped with fresh coriander

NB: This salsa goes well with chicken and fish, tacos and tortilla chips
