Quinoa Salad with Lime Vinaigrette

Quinoa Salad with Lime Vinaigrette

Serves: 4-5

Preparation: 10 minutes

Cooking: 25 minutes

 

Ingredients 

1 ½ cups quinoa
1 avocado, diced
1 mango, diced
1 capsicum, diced
1 spring onion, thinly sliced
1 cup fresh coriander, roughly chopped

Dressing 

Juice of 2 limes
2 tablespoons olive oil
1 small clove garlic, crushed
Pinch salt & freshly ground black pepper

Method    

Add quinoa to a saucepan with 3 cups of water and bring to the boil. Reduce to a simmer for around 20 minutes or until quinoa has absorbed water. Fluff with a fork

In a large bowl combine the quinoa, avocado, mango, capsicum, spring onion and coriander

In a small bowl mix the dressing ingredients together and pour over salad. Combine well and serve
