Roast Kūmara Salad

Roast Kūmara Salad

Serves: 4-6

Preparation: 15 minutes

Cooking: 30-40 minutes



1kg orange kūmara, scrubbed and chopped into 2cm pieces
2 tablespoons  olive oil
3 rashers bacon
2 teaspoons liquid honey
1 teaspoon wholegrain mustard
1 tablespoon white wine vinegar
1/4 cup extra virgin olive oil
1 red onion, finely diced
Baby spinach leaves



Preheat the oven to 200°C

Toss the kūmara in the olive oil and place in a single layer in a roasting dish. Cook for 30-40 minutes until kumara is tender

Cook the bacon in a small frying pan over a high heat until crisp. Remove from heat and chop into small pieces

Whisk the honey, mustard and vinegar in a small bowl to combine. Add the olive oil in a slow, steady stream while continuing to whisk

Toss the kūmara, bacon, red onion and baby spinach together on a platter and drizzle over the dressing
