Rustic Mashed Yams

Serves: 4

Preparation: 5 minutes

Cooking: 20-25 minutes



500g yams
1 medium kūmara
1 tablespoon olive oil
1 tablespoon butter
Freshly ground black pepper
Handful of fresh parsley


Heat oven to 200°C. 

Wash yams and place on a baking tray. Scrub kūmara, cut into chunks similar in size to the yams and place on the baking tray

Bake in the oven for 20-25 minutes until golden and soft, turning after 15 minutes

Once vegetables are cooked, transfer them into a bowl with the butter and pepper. Mash roughly, garnish with parsley and serve warm
